Crystallisation is completely natural and is actually a sign of pure, raw honey. Real honey granulates over time depending on temperature and its floral source — it has not spoiled. To make it liquid again, stand the jar in warm water (below 40°C). Never microwave it, as high heat destroys honey's natural enzymes.
